Belgian Chocolate Goodness at The Choco Monarch



After the Play House Brunch, Erick and I met up with Nikki and Grace for some catching up over desserts. It's as if we didn't get to have desserts and weren't full from our brunch that we still got room for dessert. :p

The Minions Craze Lives On!


About 2 years ago, when these adorable yellow creatures in blue jumpsuits hit the silver screen, kids and kids at heart alike went crazy over them and were hit by the "minions craze".

It was actually an advantage on my end when the minions craze started to spread.

Since then, orders kept pouring as clients request for minions-themed cupcakes, back when I was still happily busy making custom cakes and cupcakes when I was still back home.


And now that a new movie has come out, the minions craze lives on!


And I'm sure that I'd be getting a lot of orders again if I were back home.


Aside from the feeling of accomplishment when I see my creations, I love seeing how my customers appreciate my work. Oh how I really miss baking! I wish I can still continue it here. Knowing that I'm able to bring happiness is the very reason why love and miss what I do back home!

Labor of Love


It's my parents' 31st Wedding Anniversary yesterday and we celebrated it by having a simple dinner at home. I was supposed to make a cake, but because we still have some leftover cake from Father's Day, I just decided to make some brownies for my mom and dad.

I made chocolate fudge brownies with walnuts and cashew nuts and then decided to make it a little more special by adding some dark chocolate and dulce de leche drizzle. :D

Happy Father's Day!

It's Father's Day today! And since I've been making cakes for quite some time now, I'm sure you know what gift I gave for my dad today. Yup, I made a cake for him, a beer cake that is! :D

I made a banana cake because it's my dad's favorite. I made into a mug of beer and made it to look like it's overflowing while beer from the can is being poured haha! :p

Hello Kitty Cake

I celebrated my 28th birthday last Friday, January 3. And because birthdays won't be complete without birthday cakes, I made my own birthday cake! Yay! :D

We usually buy cakes from bakeshops during special occasions, but ever since I started making cakes and cupcakes, the cakes that are present on our feasts are of course those which I personally made. Will do a separate post for that. :)

Hizon's Quezo de Bola Ensaymada

Was out earlier today to do some meetings, do some supplies shopping, and do some errands and girlfriend duties for Mark. Since my meeting ended a little before lunch time, I decided to grab some lunch and go straight to Hizon's in Manila to meet with Mark's mom.

While everybody's been raving about a variety of sweets and pastries that came out a few months back and some just recently, my sweet tooth still chose to crave for the classics.


Baby Items-themed Christening Cupcakes

Aside from orders for birthday parties, we also get orders for Christenings. Here's the first set of Christening cupcakes that we made. We thought of baby items as the main topper, then added on some fondant flowers and edible pearls. :)

Medical Items-themed Cupcakes

Here's our first ever set of cupcakes with handcrafted fondant toppers. :D We got an order for cupcakes that would be given as gifts to a doctor so Gia and I thought of using fondant for the cupcake toppers. We searched over the net and came up with making these medical items out of fondant.

Working with fondant for the first time was both fun and challenging at the same time. It was challenging because Gia and I are both first timers. We were hesitant at first and wondered if we're doing it right, but we were glad that we pulled it off. And it turned out to be a lot more fun! It actually brought us back to our childhood memories when we used to make some stuff out of modeling clay.

Yup, and for the first time I can say that it's not because I was just too lazy to blog, it's just that I was very busy with making cupcakes. :D

Sweet Treats from Moonleaf Tea Shop Ortigas

I finally got to use the Moonleaf Tea Shop GCs that Ms. Joana of Moonleaf Ortigas sent me a few months back. After an afternoon of culinary feast at AICA Culinary, Gia and I went to Moonleaf Tea Shop in Ortigas for some sweet fix. :)

Since we still had to get back to the house to fetch our mom, Gia and I just ordered for some milk teas for take out. The GCs that we got were only good for drinks, so we got 4 drinks, all with nata for our add-ons.

Kriska Cooks: Graham Refrigerated Cake: Queso Mango Float

When we were planning for the Mother's Day and Jaoey's 11th Birthday celebration, daddy asked if we could make a Graham refrigerated cake. And Gia and I, being very much excited for it, gladly obliged. :)

We've already made refrigerated cakes before with fruit cocktails and peaches, so we decided to use mangoes this time. And since we're also adding in some cheddar cheese, we coined its name as Queso Mango Float. Here's another recipe to satisfy your sweet tooth!

Sweet Treats from My Sweets Haven

Being someone with a sweet tooth, having to cut down on your sweets intake is really a struggle especially if you have a friend who loves to bake!

I can still remember how my friend Joie would always have me taste the goodies that she baked. I would always fight the urge to give in even though it's very tempting and would just bring the goodies home to my family instead. Joie already knew of this but she would always still thoughtfully give me some goodies whenever she bakes. I only got to give in and try her baked goodies during her merienda treat on her last day at work earlier this year. She brought some brownies and cassava cake which I both fell in love with on my first try! :D

When I knew that one of my office mates was placing an order of Joie's baked goodies, I immediately placed mine. My dad has also been craving for cassava cakes so I ordered 2 boxes from Joie. :D


Be sure to have strong arms because a box of cassava cake is a bit heavy. :p The sweet smell of the cassava and coconut milk is what will welcome you as soon as you open the box. The cassava cake had just the right amount of sweetness and consistency, unlike other cassava cakes which tend to be too watery or too hard to chew. The cassava cake was also big and thick (thus the heavy weight). I also love it's thick, creamy/milky topping. :D My dad got home from work tired and hungry and a slice of Joie's cassava cake perked him up. My mom also loved it that she brought the other box as her potluck share in their get together the next day. :)

Kriska Cooks: Graham Refrigerated Cake: Peach Float

It's been a year since I last did a recipe post, so I decided to post another one.  I just hope I can do this more often. :p

Here's another recipe to satisfy your sweet tooth. :) The recipe and procedures are basically the same with the Graham Refrigerated Cake, but this time using peaches and adding in some cheddar cheese. :)

I hate that my medicines are making me crave for sweets like crazy. :p

Unfortunately I have no choice but to resist the cravings. :p Saw these tempting cheese roll pictures in my files and I'm craving for them right now!


I was lucky enough to get to taste this yummy treat days before I was advised to cut out on my sweets intake.


Aside from the generous amount of sugar sprinkled on top of the very soft bread, what I loved most is it's cheesy core.




If you're the type who loves cheeses you'll definitely love Mary Grace's Cheese Rolls!



It actually tasted very much like Hizon's Ensaymada, but a lot cheesier because of its core which I fell in love with!

Sweet Cravings!

Was organizing my photos when I bumped into some pictures of sweets! *drool* Not only do I always crave for sweets, each sweet craving also reminds me of the people that are really close to my heart. ♥♥♥

This one reminds me of how sweet, though not verbally expressive, my mom is. :) She makes sure to get my all-time favorite sapin-sapin whenever she comes home from the market.


My dad always gets a bag of mallows for my sister as pasalubong when he and my mom do the groceries. I also become overly delighted when my dad hands the bag to Gia and instructs her to share it with us, because marshmallows are also my favorite! I'm sure my dad will now buy 2 bags of it when he reads this haha! :)


These cookies and cream muffins are the newest addition to my sweet cravings. It's my first time to try this flavor out during a lunch out with Chino. And at the first bite, I immediately loved it! It was my first time to try this flavor out and it was also my first time to go out on a lunch date with my big bro. :)

Ice cream floats remind me of my baby sister Gia. She always, as in always, makes one whenever we have ice creams and Coke or root beer at home. :p I only like coke floats though. :)


Chocolates are another one of my favorite sweet cravings! It would take my baby brother Jaoey long hours just to finish his food, but it would take just a blink of an eye for him to finish a bar of chocolate! :p


Brownies from Brownies Unlimited are what Mark's mom always lets us have for pasalubong whenever we go out with her. :) I so love the wallnut swirl!!!

And these last two sweets are what I've been craving for the most for the past few months...

I first got to try White Hat with Mark and I immediately fell in love with their froyos. I love my hat with mangoes, strawberries, and kiwis. :)

Hizon's egg rolls are what used to be Mark's pasalubong for me every time we meet. I so miss him as much as I miss these egg rolls haha! :p

Was supposed to clean up these pictures, but obviously, I just can't, as much as I just can't forget how lucky I am to have all these sweet people around!

So I guess I'll just have to let these pictures sit in my pc's memory. I think I'll be needing them more now that my OB advised me to cut on my sweets intake for my ovaries to be healthy again. I guess these pictures will come in handy whenever I feel some sweet cravings! :p

Kriska Cooks: No-bake Blueberry Cheesecake

I so love cheesecakes and I've been wanting to make one. Unfortunately I didn't get the chance because I was busy the past few weeks.

I remember telling Gia weeks ago that I'll make her a blueberry cheesecake for her birthday, and so last Sunday, I lived up to my promise.

Special thanks to Gia and Jaoey for helping :D. Here's Gia's birthday cake! :D


She loved it as much as the rest of the family did, so I'm sharing you this easy to prepare and delectable no-bake blueberry cheesecake recipe. :)

No-bake Blueberry Cheesecake


Ingredients:

crust:
1 200g pack Crushed Grahams 6 tbsp melted butter
2 tbsp confectioners sugar

filling:
2 200g pack cream cheese 1 1/4 cups thick cream

1/2 cup confectioners sugar 2 tbsp unflavored gelatin dissolved in 1/4 cup hot water

1 tbsp vanilla extract preserved or fresh blueberries for the topping

Preparation and Cooking Procedures:

For the crust, combine the crushed grahams and sugar in a bowl and mix well.


Add in the melted butter and mix until everything is well incorporated.


Press the mixture evenly over a pan.


Let the crust sit in the chillerr for around 15 minutes. Now we're ready to do the filling. :)

In a bowl, pour in the cream cheese, sugar, and vanilla extract and mix until well incorporated. You may also use a blender or electric mixer if you have one, but your hands and mixing skills will always be a good tool. :D


Fold in the cream, mix until smooth and add in the gelatin mixture.


The crust should be ready by now. :)


Pour the mixture over the chilled crust and refrigerate until set.


Top the cheesecake with preserved or fresh blueberries. Of course, you may use any topping that you wish. :)



Serve and enjoy!!! :D
