Tuna Oatmeal Patties

Yield: 18 patties
Ingredients
- 2 cans tuna in olive oil or in water, drained
- 4 cloves garlic, minced
- 1 medium onion, diced
- 1/2 cup rolled oats
- 3 eggs
- 1 tbsp dried oregano
- salt & pepper to taste
- vegetable oil for cooking
Instructions
1. Combine all ingredients in a clean bowl. Mix well.
2. Roll into individual balls, around 2 inches in diameter, and flatten to form a patty.
3. In a pan with oil over medium heat, cook the patties until golden brown. Flip the patties to cook the other side. Cook each side for about 2 minutes.
4. Transfer to a clean serving plate, serve with sweet chili sauce, and enjoy!

I don't stock up on canned goods because Mark is not really fond of it. You'll rarely find canned goods in my pantry, except maybe for a piece or two of canned tuna, which most of the time just stays untouched (and even gets expired). But whenever I'm too lazy to cook, a canned tuna would come in handy for a quick protein fix. I'd just pop a can or two in a pan, add in some eggs and a few spices, and Mark's meal prep is sorted.
But I guess, out of all the dishes that I cook for Mark, the tuna-egg formula is his least favorite. Which is why I thought of spicing it up a bit and making them into something that Mark would definitely enjoy.
These Tuna Oatmeal Patties have the same tuna-egg formula, but with added flavors and crunch. And I used oatmeal instead of the usual flour or cornstarch as binder. So I guess we can call this a healthy dish, too? :p
Mark loves having it with freshly cooked white rice. Goes well with plain old tomato ketchup, but I like it more with sweet chili sauce. You may also just do away with flattening them to make tuna meatballs instead.
I had them pan-fried, but baking them in an oven will also work wonders. I'm sure these patties will also taste good in a bun with some mayo, tomatoes, and lettuce; for a delicious no-meat burger. Now that I'll really have to try!
