Today's Food Friday feature is Southwest Sweet Potato Salad with Honey Lime vinaigrette by Jennifer of Take Two Tapas. I've come to love sweet potatoes because of Mark. It's his number one source of good carbs when he's on a diet. I've tried making it into sweet potato mash, but not into a salad yet, so this one's really something new to me.

Sweet potatoes, black beans, and avocado—they're individually yummy and I never imagined they'd go well altogether. A perfect power-packed salad for any season. Drizzled with a honey lime vinaigrette, plus fresh pomegranate seeds for that little tartness, this will definitely make our tastebuds dance! :D Go check out her recipe HERE.
