I love oat cookies! I used to bake Chocolate Chip Oatmeal Cookies back home. Haven't tried it with apple and carrots yet, but it definitely sounds yummy! Here's a photo of some of the cookies I made when I was still into baking. I really hope I can do that again here. :D
