Tuna Fusilli Aglio e Olio

Yield: 4-6 servings
Ingredients
- 2 cans tuna in olive oil or in water, drained
- 8 cloves garlic, minced
- 1 250-gram pack whole wheat fussili
- 4 tablespoons extra virgin olive oil
- 1 tablespoon dried oregano
- pepper to taste
- chili flakes and parmesan cheese
Instructions
1. Cook pasta according to package directions.
2. Drain the tuna and set aside.
3. Pour in the oil in a pan over low heat and saute the garlic until the aroma fills the air. Make sure to set the burner to low as we don't want a golden brown garlic.
4. Add the tuna and stir until well incorporated. Let it simmer until some of the liquid from the tuna evaporates. Add the pepper, dried oregano, and chili flakes shortly after.
5. Stir in the cooked pasta while still on the heat. Remove from heat and transfer to a clean serving plate.
6. Top with parmesan cheese and chili flakes all up to your heart's and tummy's desire. :) Serve and enjoy!

It's a given that I love to cook and cooking is my most favorite chore. And while I enjoy cooking for others especially for my family and for Mark, it's kind of a love-hate relationship when it comes to cooking for myself now that I'm in Dubai. :p I'm mostly all on my own especially on weekdays which means that I have no choice but to eat alone, which I hate the most by the way.
Well I guess that's also the reason why I feel a little lethargic when cooking for myself, add the fact that it's definitely more costly if I'd cook meals in small portions every single day. So what I'd usually do is cook one dish on the weekend which could already last for 3-4 days, and sometimes even for the rest of the week. Thank God for refrigerators and microwave ovens. :p
But because I am really lazy to cook for myself, I'd usually cook dishes that are easy to make, with just minimal ingredients and less cooking time, like this aglio e olio pasta dish which has become my staple food. :p Aglio e olio is simply garlic and oil, which serves as the base sauce for pasta. Herbs, tomatoes, chili flakes, and parmesan cheese are also the usual added ingredients. Meat like chicken and tuna may also be added, but I like mine with tuna. :)

Easy, right? And yummy too! But here's one easier way to do it. Sometimes, when I'm totally not in the mood to cook, I just use the same ingredients, toss everything in a microwavable container, and pop it in the microwave oven! Same old goodness, but definitely less the prep time! Haha!
