Kriska Cooks: Pork Steak and Ensaladang Kamote

Just like what I said before, I always make sure that I get to cook Mark's favorites whenever he comes over at my house for a visit. Aside from his all-time-favorite Kare-Kare, I also learned that he has come to love my version of Pork Steak. :D Thanks to my mom for teaching me the recipe. :)

Pork steak is actually a twist on the Filipino dish, Bistek Tagalog (Beef Steak), as it has the same ingredients and just differs with the main ingredient which is the meat. Paired with steamed rice plus Ensaladang Kamote (Camote Tops Salad), I'm sure this dish will be a family hit, just like how it has always been for our family. :)


Ingredients:

IMG_12643 medium-sized onions, cut into thin round slices
IMG_12632 medium-sized onions, cut into rings

1/4 cup soy sauce and a dash of ground black pepper



6 tbsp sugar
cooking oil for frying

water, vinegar, and sugar for the salad


Preparation and Cooking Procedures:

Wash pork under running water and set aside. Prepare the marinade by mixing the soy sauce, sugar, pepper, and calamansi juice.

In a clean bowl or mixing pan, pour in the marinade and lay the pork slices. With your clean hands, mash the meat lightly making sure that each slice is covered evenly with the marinade.

Set aside and let it sit for 30 minutes. For a tastier treat, you may marinate the meat overnight. :)

Set aside the marinade in a pan, we'll use this for cooking later.

In another pan with oil, fry the pork slices over high heat. Cook each side of the pork until golden brown.

Put the cooked meat in the pan with marinade that we set aside earlier. Cover and simmer for 10 minutes until the meat is tender.

In the same pan where we fried our pork, add in some cooking oil and fry the potatoes until golden brown. Drain and set aside.

Add in the onions in the pork and simmer for 3 minutes.

Turn off the heat once the onions become translucent.

Now we can prepare the salad. For the Ensaladang Kamote, we'll need 2 medium-sized tomatoes and 1 medium-sized onions, julienned, and a bunch of camote tops.

Wash the camote tops over running water. In a pan with water, put the greens and bring to a boil. Drain and lay on a serving bowl.

Top the greens with tomatoes and onions and pour in the vinegar mixture (6 tbsp of sugar with 1/4 cup vingear).

Transfer the pork steak in a clean plate and top with fried potatoes. Serve with steamed rice and Ensaladang Kamote. :)

I know most of us have already been planning for summer outings. Now if you want to have something aside from the usual dishes that we get to eat during outings like the very famous Adobo, I'm sure Pork Steak will be a great alternative! :)
