Gia Cooks: Grilled Stuffed Squid

Yield: 5-6 persons

Ingredients
  • 1/2 kg squid (6-7 pcs medium-sized)
  • 2 pcs tomatoes, diced
  • 2 pcs onions, diced
  • 2 pcs salted eggs
  • 1 tbsp ginger, minced
  • 1/4 cup cheddar cheese, grated or cut into cubes
  • salt and pepper to taste
  • toothpicks

Instructions
1. Clean the squid by washing it with water. Put the clean squids in a pan with water and bring to a boil for a few minutes. This will make the squid firm and easy to be stuffed with.
2. Cut off the head of each squid and set aside. Remove the inside portion of the body by washing it with running water. Drain and set aside.
3. Combine the tomatoes, onions, ginger, salted eggs, and cheese in a bowl. Mix well. Add salt and pepper to taste.
4. Stuff the squid with the mixture, making sure that the filling is just enough for the head to be attached.
5. Attach the head to the stuffed body by securing it with toothpicks.
6. Using a cutter or a knife, make criss-cross strokes onto the squids. 
7. Cook the stuffed squids over a grill until tender, about 8-10 minutes per side.
8. Transfer to a clean serving plate, serve, and enjoy!

Make sure not to cook the squid too much as will make the squid a little hard to chew. :)


The dish may be served as is or you may choose to slice each squid. This also goes well with a sauce dip which is a combination of soy sauce, vinegar, minced onions and sugar. :)

Updates:

May 16, 2013 - For those with turbo broilers, you may also choose to grill the squid there using the procedures above. Here are just a few tips:

* Since we will be using the turbo broiler, there's no need to boil the squid. After cleaning the squid, we can go directly with the stuffing part.

* Set the heat turbo broiler to 'Grill' or 250 degrees Celsius and cook each side of the squid for 10 minutes.
